I'm not one to turn away good veggies, especially in the summer when they are literally fresh from the vine so I took in the giant garbage bag full of spinach and tried to decide what to do with it all. There was no way I could effectively use all of that spinach in recipes before it went bad. I love spinach quiche in the winter time, so I decided to blanch the spinach and put them in bags just right for quiches.
I washed, boiled, shocked and squeezed the spinach into fist sized balls and stuck them into the freezer so that I can continue to enjoy fresh spinach even in January. Blanching spinach is certainly satisfying, especially when you consider how you are storing goodness away to enjoy at a later date. However, it's always a bit sad to see a giant bag full of spinach turn into a mere four fist-sized balls of blanched spinach.
After the spinach was packed away into the freezer I decided to do something with the plethora of zucchini that found its way into my kitchen. I love zucchini, in fact, I will go on a limb and say it is my most favorite summer veggie. I love zucchini heated with fresh tomatoes and baked with stuffing and mozzarella cheese (I'll share the recipe soon for those who are experiencing zucchini overload like me). I decided to try out Caroline's zucchini pineapple bread recipe. Oh boy, I never would have thought to pair pineapple and zucchini together but it created the yummiest, moist bread! I wish I had some pictures of the bread, but it was eaten before it ever had a chance. I'll certainly make the bread again because I'm sure to find more zucchini on my doorstep and it was so very good!I hope your Tuesday is wonderful and the zucchini doesn't overtake your kitchen!!!!

Yes, spinach sure shrinks up, doesn't it? That pineapple zucchini bread sounds great. Must try that with the next baseball- bat-sied one my mum sends home! Haha!

I loved reading about the attack of zucchini in that book. I'm glad you reminded me of that...I'm smiling just thinking about it. I wouldn't be complaining either...that zucchini bread sounds yummy.
Hi Jessica. Thanks for the canning encouragement. I actually read your post on canning after the first night of jam making and found it to be nicely reassuring. We did go out and buy a canner just to be sure to get the full recommended inch of boiling water over the tops of the jars. I too am interested to see what we do after the nectarines!

Zucchini and pineapple bread, that sounds interesting. I like the idea of putting away fruits and veggies for future consumption too, it's so sad to waste them you know and it really helps to save on the food budget,

"Don't look a gift spinach in the mouth", is what they always say...no...that's not right...
It is a little nuts how much it shrinks, but now you're all set for quiche, like you said, and on pizza, and in pasta, and just cooked up with some garlic and sour cream. Yum for spinach.
