Because I discovered a million new/old craft ideas when I cleaned out the Craft Binder of Disaster I found this pattern for patchwork placemats. Off to Joann's I went with some coupons hot in my hand and I came home with this fabric. Love it! I ended up buying just plain cotton solid fabric for the main fabric, but in my mind you cannot go wrong with that and a fat quarter bundle for the patchwork parts. I was not originally going to buy the fat quarter bundle, but these colors looked so...autumnal...to me. I am very pleased with how the placemats are coming out .... so much that I doubled the amount I am making and giving them to two people. I think I'm going back to get more fabric so make even more (perhaps different colors) because they are so simple, yet so beautiful.In the kitchen my mind has been flying. Gardens are full and we are on the receiving end of the bounty. Grammie's tomatoes are actually red so I got a whole bunch when I was there yesterday for an impromptu lunch to celebrate a small little thing like MY CONTRACT GETTING RENEWED FOR THIS SCHOOL YEAR. Of course, mine are still an awesome shade of kelly green. While making the yummiest zucchini quiche my neighbor of Garbage Bag of Spinach fame showed up with eggplants and green peppers. Who is having sauteed tomatoes and eggplant tonight for dinner??
I have to share this zucchini quiche recipe...it's really yummy. Grammie's Zucchini Quiche
4 c. thinly sliced zucchini
1 large onion, thinly sliced
2 tbl. butter (I used olive oil)
2 eggs (I used one egg and two egg whites)
2 tsp. dried parsley flakes
1/2 tsp. garlic powder, dried basil, oregano, salt
1/4 tsp. pepper
2 c. shredded mozzarella (I used 1 c. shredded cheddar)
1 tsp. mustard
1 pastry shell (I made mine crustless)
I'm stopping here...Now I know why my Grammie's recipes never taste the same when I make them...I make a completely different recipe!
Ok, saute zucchini and onion in butter until tender; drain in a large bowl. Whisk the eggs, parsley, salt, garlic powder, basil, oregano, and pepper together. Whisk in mustard. Layer zucchini and cheese in pie pan. Pour egg mixture over top. Bake uncovered (yet with a pan underneath so your oven stays clean) at 400 degrees for 35-40 minutes or until knife in the center comes out clean and crust (if you have one!) is golden brown. Let stand for five minutes and serve.

That quiche looks soooo good! As I was reading the recipe I was trying to figure out how I could make it vegan. I hate soy cheese and a cup of it would be a lot. Hmmm, must figure that out.

That quiche looks incredible, and I am definitely, absolutely, without a doubt, going to make that as soon as I have the stuff! And the placemats are great. I've been getting an urge to quilt (it's been years). We've got an amazing quilt shop in the area with rooms and rooms of cool fabrics. I'm on my way...
