Living in an old schoolhouse divided into apartments has its pros and cons. Less yard space meets village living. Village living equals more noise but also more walking. Sharing walls equals either making friends or making enemies. I happen to share a loft wall with a pretty awesome neighbor who is just like me. She has a love of fabric just like me. My loft is a bedroom, hers is a crafting studio. She loves to cook delicious things that make me hungry as I walk up the stairs. The best is when she comes over to deliver zucchini patties she made just because she thinks I'll like them. Not only that, she offered to come over and teach me how to make them saying "It's not really a recipe, it's more of an idea." (Exactly what I say...see, we are the same).
Last night I bought the ingredients and tempted her to come over with Ella Fitzgerald playing in the kitchen and the promise I would teach her to make marshmallows. We sliced and sauteed and I found my new favorite summer recipe of all time and you know how I feel about zucchini. I learned so much about cooking techniques in just a few hours. She gave me hints on buying knives and where to find the best cheese. I think sharing walls really isn't all that bad...
Linda's Zucchini Patties
2 zucchinis, shredded and squeezed through cheese cloth
4 carrots, shreadded
1 sweet onion, diced
2 eggs
1/2 cup Swiss cheese, diced into small squares
1/2 cup Parmesan cheese
salt
pepper
1 tsp. thyme
1 tsp. garlic powder
about 1 cup of bread crumbs
(or enough to make the zucchini/carrots come together)
Form small palm sized patties, place in a heated pan with olive oil and butter. Warm until golden brown and flip. We also made a batch with ricotta cheese in the middle. That is a true treat!

How lucky you are to have had such nice neighbors. The way houses are built in my neighborhood doesn't help with making neighbors!

Reading your blog always makes me smile, Jessica. So glad you have such a great neighbor. I don't really know mine well, and just assume they aren't kindred spirits. I should get over that assumption.
Sounds like you are blessed with a great neighbor! I make a simplified version of these (egg, zuc, spice, pinch of flour or breadcrumb, parmesan and garlic) and top them them with the easiest tomato sauce ever (chopped, seeded tomato, olive oil to coat, basil chiffonade, garlic and sea salt at room temp). It's one of my all time favorite summer meals.

Zucchini is one of the things I lvoe most about summer! Zucchini carbonara, zucchine slice ... your patties look wonderful! Would be lovely with a dab of yoghurt and dill on the side. Mmmm.

I love zucchini myself. I bet my kids would love these. I'm so glad you have good neighbors. I'm hoping to get some good neighbors, right now we don't have any. It feels kind of lonely knowing no one lives next door.

Made the patties last night (to go with our corn soup) and added chopped cilantro to the mix. It was very yummy! Next time we're going to remember to stock some sour cream to plop on top of them too!
