what's for dinner (weeknight version)

My work schedule this year is wonderfully flexible.  I have my short days and my long days and that really works out well for me.  On my longer day I come home from starving already past my regular dinner hour (I'd be happiest to eat dinner at 4 in the afternoon!) and I am ready to eat.

These are the nights that I love a quick, easy to throw together meal but one that is also healthy and tastes good.  Lately this shrimp dish has been showing up on the table quite regularly.  We can't really get enough of it and from start to end the meal takes about 20 minutes.  I normally serve this up with a fresh loaf of bread, salad with olive oil and balsamic, and a glass of red wine.  That's what I call dinner!

Shrimp & Gnocchis
1 pound of gnoccis
1/2 pound of shrimp, detailed 
(or whatever it's called...I never do it so I don't know!)
2 cloves of garlic
butter
olive oil
salt
pepper
1/4 cup of white wine
4 cups of baby spinach
3 tablespoons of sundried tomato pesto
feta cheese

Start a pot of water to boil.  In a frying pan, saute the garlic with olive oil and butter until it starts to turn golden brown.  Add the white wine and shrimp and saute.  Throw the gnocchis into the boiling water.  Add the spinach in with the shrimp and garlic (the white wine should be reduced at this point).  Saute spinach until slightly wilted.  Drain the gnocchi, put in a bowl, and toss with pesto.  Add the shrimp and spinach.  Toss again and add crumbled feta to the top.  Enjoy!

Oh! This is my kind of meal, too, Jessica! My husband and I like to cook together on our at home date nights and gnocchi-from-scratch (not a 20 minute meal) used to be a favorite. I need to find a couple gluten free gnocchi recipes for us to try now. Thanks for sharing!
